I thought I would create a site to share our family favorite recipes. These are not my recipes but I thought I would pass along some of the best recipes we make here in the Clark House. I will try to give credit or blog sites to those that we love. Enjoy!

Italian Pork Chops


Boneless Pork chops
½ package Ritz crackers
½ package dry Italian dressing
½ c. Parmesan cheese
1-2 eggs
Olive oil 

Beat eggs (1-2) in shallow dish. If not already combined, add cheese to cracker mix and place in shallow bowl, or plate. Heat skillet, usually on medium heat, with olive oil, use at least enough oil to cover bottom of pan. Once oil is hot, dip a pork chop into eggs, coating both sides. Then cover in cracker mix. Drop into skillet and cook pork thoroughly, turning 2-3 times to ensure breading does not burn. If burning begins, turn heat down.

Slow Cooker Tex mex Chicken

Here is a good one from Kraft Foods...

1lb of boneless skinless chicken breasts - cut into 1inch strips
2 tbsp of taco seasoning
2 tbsp. flour
1 each - green pepper, red pepper cut into 1 inch wide strips
1 cup frozen corn
1 1/2 cup salsa
1 cup Mexican style shredded cheese

Toss chicken in seasoning and flower in slow cooker. Stir in all remaining ingredients except cheese; cover with lid

Cook on low for 6 to 8 hours or on high for 3 to 4.

Stir just before serving. Top with cheese serve over hot cooked rice.

Taco Pasta Salad

2 cups uncooked spiral pasta
1 cup ground beef
1 envelope taco seasoning
3 cups shredded lettuce
2 cups halved cherry tomatoes
1 cup shredded cheese
1/2 cup chopped onions
1/2 cup chopped green pepper
1/2 cup catalina salad dressing
Tortilla chips


Cook pasta according to package directions. Meanwhile in a large skillet, cook beef till no longer pink. drain. stir in taco seasoning. cool.

Drain pasta and rinse in cold water, stir into meat mixture. Add the lettuce, tomatoes, cheese, onion, green pepper and dressing ; toss to coat. Serve with chips.

**Clark changes - I use almost 2lbs of ground turkey  and add almost a full cup of dressing.

Saucy Parmesan Chicken

4 small boneless skinless chicken breasts
1/4 cup. Kraft Light Zesty Italian Dressing
1/4 cup. Grated Parmesan cheese

Place all ingredients in a ziploc bag. Seal the bag and coat all sides of chicken.
Refrigerate for at least 30min.
Preheat Oven to 425°F

Arrange chicken on a foil covered baking sheet. Bake 20min  or until cooked through.

I serve this with buttered egg noodles and peas!

Mountain Dew Ham

1 - Ham
1 - can Mt. Dew
1- can of crushed pineapples undrained

Place Ham in a crockpot, pour can of pineapples on top . Then pour can of pop on top and cover.

Cook for 8-10hours on low.

Super Yummy!

Crock Pot Chicken with Black Beans & Cream Cheese

4 to 5 frozen boneless, skinless chicken breasts


1 15oz. can of black beans, drained

1 15 oz. jar of salsa

1 15 oz. can of corn, drained

1 8oz. package of cream cheese


Place chicken breasts in crock pot. Add beans, salsa, and corn. Cook on high for 4 to 6 hours, or low for 7 to 8 hours. Add cream cheese (just set it on top) for the final 30 minutes. Mix thoroughly and shred chicken before serving. Serve with rice.

BAKED CHICKEN CATALINA


6 chicken breasts for a 9x13 pan
1 lg. bottle Fat Free Catalina Salad Dressing
1 can whole cranberry sauce
1 pkg. dry Lipton Onion Soup
Place chicken breasts (can be frozen) in pan. Mix together cranberry sauce, Catalina dressing, and dry onion soup and pour over chicken. Cover with foil and bake 1 hour at 350 degrees. Temperature: 350 degrees. Time: 1 hour.
Recipe can be increased according to the number of people you want to serve. This same recipe can be used with pork chops. Very tasty, colorful and delicious. Enjoy!
