I thought I would create a site to share our family favorite recipes. These are not my recipes but I thought I would pass along some of the best recipes we make here in the Clark House. I will try to give credit or blog sites to those that we love. Enjoy!

Crispy Not fried Chicken
1cup BBQ sauce
1pkt. Shake ‘N bake extra crispy seasoned coating mix
2lbs boneless skinless chicken halves (I only use bonless Chicken breasts)
Preheat over to 400degrees.
Place bbq sauce and coating mix in separate pie plates or shallow dishes. Dip chicken in bbq sauce and then in shake n bake, turning over to evenly coat both sides of each chicken piece.
Place in a single layer foil lined baking sheet.
Bake 20min or until chicken is cooked through.
** I serve this with a salad and corn and cheddar biscuits**
This is one I could make everyweek and dave would be happy.

Tex Mex Meatloaf
Great meal. Easy clean up. Make some mashed potates and your all set! Dig In!
4 Sheets foil
Non stick spray
1lb extra lean ground beef
1/4c. Finely crushed tortilla chips
1/4c. Finely chopped onion
2tsp chili powder
2tsp Worcestershire sauce
1/2 tsp garlic salt
3/4c. Bbq sauce, divided
1can kernel corn
Preheat oven to 450 degrees. Combine all ingredients and 1/4cup barbecue sauce. Shape mixture into 4 meat loaves, flattening slightly.
Center one meat loaf on each sheet of Reynolds wrap release. Top with corn, spoon remaining bbq sauce over meat and corn.
Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make four packets.
Bake 18 to 20 minutes on cookie sheet.

Cheesey Potatoes
This is a recipe I get asked to make for all our family parties. usually have to make a double batch. It is a great side or you could throw in some cooked chicken or ham and make it a main dish.
1 Cup Chopped Onions
1 Cup Sour Cream
1 Can Cream of Chicken Soup
2lbs Hasbrown Potatoes (Frozen)
1 Stick butter or Margarine
1 8oz Cracker Barrel Cheese (Cheddar)
Preheat Oven to 350In a sauce pan over medium heat, combine soup, Sour Cream, butter, and cheese. Heat until completely melted.Place potatoes in bottom of shallow baking dish and cover them with cheese mixture.Bake for 1 hour

Chicken Stir Fry
Super quick yummy stirfry.. I could eat this every week!
1 pkg Perdue Short Cuts carved chicken breast, honey roasted
1 TBS olive oil
1 bag (1lbs) frozen broccoli stir fry, partially thawed
1 cup stir fry sauce
Hot Cook rice
In a large skillet, heat oil over med-high heat and cook vegetables 1min
Add chicken and stir-fry sauce and heat 3min.
Serve chicken mixture over hot rice.

1 packet Hidden Valley ‘The Original Ranch’ salad/seasoning mix
1/3 cup Lemon Juice
3 TBS Olive Oil
3 TBS water
1 1/2 to 2 pounds Mild white fish
Combine seasoning and salad mix with lemon juice, olive oil and wine in shallow dish. Mix well, add fish and coat all sides with mixture. Cover and refrigerate for 15 to 30min. Remove fish from marinade and place on broiler. Broil 9 to 12min or until fish begins to flake
Makes 4 serving

1 each green, yellow ,red pepper
1/2 c. Colby& Monterey jack cheese shredded
Brown hamburger and drain, add corn, salsa and cheese mix well.
Cut each pepper in half lengthwise and remove seeds. Spoon the burger mixture into the pepper halves. Place in 9x13 baking dish. Pour 1/2 cup water in bottom of dish. Cover with foil.
Bake @ 400 degrees for 30minutes. Uncover and sprinkle with additional 1/2cup cheese and bake for 10min. I usually make white rice to go with this one..

Beef and Mushroom Bake
Here is a great one I got from Heather Nutting. I used to make this one alot for MOPS moms who had babies. It is a great winter recipe. thanks Heather!
1 to 2lbs Ground beef
1/4 green pepper
1 medium onion
1can mushroom soup
3 stalks of celery
2 1/3cup dry egg noodles
1(4ounce) can mushroom
3/4tsp salt
1/4lb Velveeta cheese
4 beef bouillon cubes
Brown onion and green pepper with beef in large fry pan. Dice celery and mix in with bouillon water. Cook noodles in water. (drain) add mushrooms and soup to meat and melt cheese into it. Add celery and noodles and mix. Turn into a casserole dish. Bake 20min @
350 degrees.

Again another great one from Kelly :)
2 lb hamburger meat
1 small onion, chopped
1 can of chopped black olives
1 can of cream of mushroom soup
1 Large can of Enchilada sauce
8 oz of shredded cheddar cheese
6-8 flour tortillas
Brown the meat and sauté the onions in with it. Once that is done, add in the olives and let it heat and then add in 1cup of the cheese and let it melt - mix it all together. Fill tortillas with the meat mixture and roll up. Combine the mushroom soup and enchilada sauce and pour on top. Top with remaining cheese. Bake at 350 for 30-40 minutes.
**We ommitted the olives and I used large can of Enchilada sauce minus 1/2cup****

Lemon Garlic Chicken
Ok so I was on this kick this weekend trying recipes from Kelly's blog here is another wonderful chicken recipe.
6 tablespoons olive oil
2 lemons, 1 thinly sliced, 1 juiced
4 cloves garlic1 teaspoon salt
1/2 teaspoon ground pepper
1 can green beans whole
8 small red potatoes, quartered
4 chicken breasts
Preheat oven to 450. Coat a large baking dish with 1 tablespoon olive oil. Arrange lemon slices from 1 lemon in a single layer on the bottom of the dish. In large bowl combine remaining olive oil, lemon juice of 2nd lemon, garlic, salt and pepper. Add green beans and toss to coat. Using tongs, remove green beans and arrange them on top of lemon slices. Add potatoes to same olive oil mixture and coat. Arrange on inside edge of dish on top of the beans. (I think it’s so pretty!) I also add a lemon pepper mixture on top of everything. It adds a lot of flavor. Place chicken in olive oil mixture and coat. Place chicken in dish. Roast for 40-50 minutes. Remove chicken and continue roasting potatoes/beans if necessary.
** Only changes I made on this is a didnt use entire squeezed lemon it was a bit much for us. Super yummy kids loved it!
Chicken Lasagna
Here is a wonderful recipe from another blogging mom. I made this last night and it was pretty darn good. And we had our Italian neighbor over and he approved it :) . Buon appetito
CHICKEN LASAGNA
2 or 3 cooked chicken breasts
2 jars of Prego sauce
Uncooked lasagna noodles
1 15 oz ricotta cheese
2 cups mozzerella
1/4 cup parmesan cheese
In a 11x7 dish, spread 1 cup sauce, top with uncooked lasagna noodles.
Then layer ricotta cheese, mozzerella cheese, and parmesan cheese. Cut up chicken into small pieces and spread on top. Spread 1 cup sauce on top of that and then cover with another layer of noodles. Then put remaining sauce on top of the noodles. Cover with foil in oven. Bake 1 hour at 375. Uncover and top with remaining mozzerella cheese and let stand for five minutes.
**The only changes I made is I made 2 full layers of ricotta cheese,mozzerella, Parmesan and Chicken...
